Method:
For the Sweet Potato Fries:
- Set your oven to 220°C. Line a baking sheet with parchment paper.
- Peel the sweet potatoes (optional) and cut them into evenly sized wedges or fries.
- In a large bowl, toss the sweet potatoes with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper until well coated.
- Spread the fries in a single layer on the prepared baking sheet. Ensure they are not overlapping for even crispiness.
- Bake for 25-30 minutes, flipping halfway through, until the fries are golden and crispy.
For the Spicy Chili Lime Dip:
- In a small bowl, whisk together the Greek yogurt, sriracha, lime zest, lime juice, smoked paprika, and a pinch of salt until smooth.
- Adjust the spice level to your liking by adding more or less sriracha.
- Serve the warm, crispy sweet potato fries with the spicy chili lime dip on the side.
