Ingredients for the Pie Crust:

  • 200g all-purpose flour
  • 100g cold unsalted butter, cubed
  • Pinch of salt
  • 60ml ice water

Ingredients for the Filling:

  • 5 large eggs
  • 100g fresh spinach leaves
  • 100g crumbled feta cheese
  • 50g shredded mozzarella cheese
  • 25g grated Parmesan cheese
  • 60ml milk
  • 60ml heavy cream
  • 15ml olive oil
  • 1 small onion
  • 2 cloves garlic
  • Salt and pepper
  • Fresh herbs (such as parsley or basil), for garnish

Instructions for the Pie Crust:


  1. In a large mixing bowl, combine the all-purpose flour and salt. Add the cubed cold unsalted butter.
  2. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs and there are no large chunks of butter remaining.
  3. Gradually add the ice water to the flour-butter mixture, 1 tablespoon at a time, mixing with a fork or your hands until the dough comes together. Be careful not to overmix.
  4. Once the dough holds together when pressed, shape it into a ball and flatten it into a disc. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes to allow it to rest and chill.
  5. After chilling, remove the dough from the refrigerator and place it on a lightly floured surface. Roll out the dough into a circle about 2-3 inches larger in diameter than your pie dish.
  6. Carefully transfer the rolled-out dough to the greased pie dish, pressing it firmly against the bottom and sides of the dish. Trim any excess dough hanging over the edges.
  7. Preheat your oven to 190°C (375°F). Lightly grease a 23cm (9-inch) pie dish and line it with the pie crust, pressing it firmly against the bottom and sides of the dish. Trim any excess crust hanging over the edges.
  8. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.
  9. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, or until wilted. Remove from heat and set aside to cool slightly.
  10. In a mixing bowl, whisk together the eggs, milk, and heavy cream until well combined. Season with salt and pepper to taste.
  11. Stir in the crumbled feta cheese, shredded mozzarella cheese, and grated Parmesan cheese into the egg mixture.
  12. Add the cooked spinach mixture to the egg and cheese mixture, and stir until evenly distributed.
  13. Pour the mixture into the prepared pie crust, spreading it out evenly.
  14. Bake the quiche in the preheated oven for 30-35 minutes, or until the centre is set and the top is golden brown.
  15. Once baked, remove the quiche from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs, such as parsley or basil, before serving.
